Founded in 1889 (Meiji 22), this sake brewery is located in Miki City, Hyogo Prefecture, Japan's leading producer of Yamada Nishiki rice. "Aoi" is named after the crest of Kyoto's Matsuo Taisha Shrine, revered as Japan's premier sake-brewing deity. Using local sake rice, the brewery aims to brew sake that makes the most of the rice's umami. Their pure rice sake, made with 100% Yamada Nishiki rice, is characterized by its full-bodied flavor and lingering finish. For the past 35 years, the brewery has been a member of the Long-Term Aged Sake Research Society, where they have been working on aging sake. In 2022 and 2023, they won a Silver Award at the International Wine Challenge, one of the world's largest sake tasting events. They will continue to promote the deliciousness of aged sake to the world.
