A new brand that pursues the ideals of the master brewer. "Opus" means "work number". As a result of wanting to simply express the appeal of the ingredients, we have chosen to add no water, no carbon filtration, and pasteurize the bottle once. Taking advantage of the characteristic calcium-rich hard water, we aim to create a sake that has a refreshing taste and is accented with a subtle fruity aroma and acidity, making it enjoyable with meals. In order to keep the sake in the best condition as it is, we bottle it within one week after pressing and pasteurize it in a capped state, which makes it less likely to oxidize and keeps it fresh.
