This new brand pursues the brewer's ideals. "Opus" means "product number." Hoping to simply express the appeal of the ingredients, we have chosen to add no water, no carbon filtration, and pasteurize the bottle once. Making use of the characteristic calcium-rich hard water, we aim to create a refreshing sake with a subtle fruity aroma and acidity, perfect for pairing with meals. To preserve the sake in its best condition, we bottle it within one week of pressing and pasteurize it in the capped state, preventing oxidation and maintaining freshness.
