A new brand that pursues the ideals of the Toji (master brewer). "Opus" means "work number." As a result of wanting to simply express the charm of the ingredients, we have chosen to produce sake without added water, without carbon filtration, and with a single pasteurization in the bottle. Utilizing the distinctive hard water rich in calcium, the goal is to create a sake that can be enjoyed with meals, with a clean taste accented by a subtle fruity aroma and acidity. To keep the sake in its best condition, it is bottled within one week of pressing and pasteurized with the caps on, making it less susceptible to oxidation and preserving its freshness.
