Founded in 1911 (Meiji 44), Tanaka Sake Brewery is currently run by the fifth-generation brewer, who meticulously crafts sake with his family and a few other people under the motto of "Wajouryoshu (connecting people through delicious sake)." The signature brand, "Harunomine," was named after the fact that new sake is born just as the signs of spring begin to appear on the peaks at the foot of the Suzuka Mountains, as seen from the brewery. "Harunomine" is made from locally grown sake rice grown in mineral-rich soil and underground water from the Suzuka Mountains, and comes in a variety of varieties, including junmai sake, regular sake, and aged sake. The soft, striking lettering on the labels was created by Tanaka's wife, Tomoko.
