Founded in 1889 (Meiji 22), this sake brewery is located in Miki City, Hyogo Prefecture, the top production area for "Yamada Nishiki" rice in Japan. The name "Aoi" comes from the crest of Matsuo Taisha Shrine in Kyoto, which is revered as the foremost sake brewing deity in Japan. Using local sake rice, they aim to produce sake that brings out the deliciousness of the rice. Their 100% Yamada Nishiki junmai sake is full-bodied and has a distinctive lingering finish. They have also been members of the "Long-Term Aged Sake Research Association" for 35 years, working on the aging of Japanese sake. In 2023, they won a silver medal at the International Wine Challenge, one of the world's largest alcoholic beverage competitions. They hope to continue sharing the deliciousness of aged Japanese sake with the world.
