Founded in 1889 (Meiji 22), this sake brewery is located in Miki City, Hyogo Prefecture, Japan's leading producer of Yamada Nishiki rice. "Aoi" is named after the crest of Kyoto's Matsuo Taisha Shrine, which is revered as Japan's leading sake-brewing deity. Using local sake rice, the brewery aims to make sake that makes the most of the rice's flavor. Their pure rice sake, made with 100% Yamada Nishiki rice, is characterized by its fullness and lingering finish. For the past 35 years, they have been a member of the Long-Term Aged Sake Research Society, where they have been working on aging sake. In 2023, they won a Silver Award at the International Wine Challenge, one of the world's largest sake tasting events. They hope to continue spreading the deliciousness of aged sake to the world.
