Nestled on the shores of Lake Biwa is Naminone Sake Brewery, a small sake brewery with a history of over 200 years. With the philosophy of "Kokoshinshu" (old jar, new sake) in mind, which involves preserving tradition while embracing new things, the 10th generation brewery owner, Takashi Nakai, and his two brothers are dedicated to carefully brewing sake in small batches, and their yearly evolution is attracting attention. Naminone is a sake renowned for its elegant sweetness and umami, inherited from Noto Toji (master brewer) Taiichi Kanai. In addition to Yamada Nishiki, Bizen Omachi, and Aiyama, they also use Watari-bune, a sake rice unique to Shiga Prefecture, allowing you to enjoy the unique flavors of each variety.
