Naminooto Sake Brewery is a small sake brewery that has been in business for over 200 years, located on the shores of Lake Biwa. With the philosophy of "Kokoshinshu" (old jar new sake) that preserves tradition while trying new things, the 10th generation brewer, Takashi Nakai, and his three brothers work on small batches of careful sake brewing, and their yearly evolution is attracting attention. "Naminooto" is a sake that is renowned for its elegant sweetness and flavor, and is made using techniques inherited from Noto Toji (master brewer), Taiichi Kanai. In addition to Yamada Nishiki, Bizen Omachi, and Aizan, some of their sakes are made using Shiga Prefecture's unique sake rice, Tosen, and you can enjoy the flavors that bring out the individuality of each variety.
