The main brand, "Suzukabuto," is named after the "Suzuka Mountains," which are the backdrop for the brewery, and the "Kabuto" (helmet) of Koga, where the brewery is located. Using groundwater from the Suzuka Mountains and locally grown sake rice, the brewery strives to create a traditional "sake that tastes like rice." By leaving as much of the rice as possible unpolished during polishing, the brewery is able to retain the subtle sweetness and umami of the rice. The resulting sake is satisfying to drink, so it is recommended as an accompaniment to meals or as an evening drink.
