The main brand, "Suzukabuto," is named after the "Suzuka Mountains," which form the backdrop for the brewery, and the "kabuto" (helmet) from Koga, where the brewery is located. Using groundwater from the Suzuka Mountains and locally grown sake rice, the brewery strives to create a traditional "sake with a rice flavor." By leaving as much of the rice as possible unpolished during the rice milling process, the brewery is able to savor the rice's subtle sweetness and umami. The resulting sake is satisfying to drink, making it a great choice for drinking with meals or as an evening drink.
