By adding passion fruit (called "liliko?i" in Hawaiian) harvested on the Big Island at the end of fermentation, we've created a sake that evokes the tropical feel of Hawaii.

Lilikoi Ginjo Sake

コナコーヒーは明治時代にハワイに入植した日系人により大切に育てられ、以降世界的に有名なコーヒーになりました。日系人のおじいさんの育てたコーヒー豆は完全無農薬、手摘み、手つくりの焙煎機でゆっくり焙煎され優雅で洗練された味わいがあります。そんな世界屈指のコーヒー豆を酒に入れて、コーヒー酒を造りました。コナコーヒーは酸が低く、苦みが低く薫り高いのが特徴ですがそのイメージに合った豊かな味わいが特徴です。

Kona coffee has been carefully cultivated by Japanese immigrants who settled in Hawaii during the Meiji era, becoming world-famous since then. The coffee beans grown by the Japanese grandfathers are completely pesticide-free, hand-picked, and slowly roasted using handmade roasting machines, resulting in an elegant and refined taste. We've created a coffee sake by adding these world-class coffee beans to our brew. Kona coffee is characterized by low acidity, low bitterness, and a rich aroma, and our sake embodies a rich flavor that matches this image.

Kona coffee was carefully cultivated by Japanese settlers in Hawaii during the Meiji period, and has since become a world-famous coffee. The coffee beans grown by a Japanese grandfather are completely pesticide-free, hand-picked, and slowly roasted in a handmade roaster, resulting in an elegant and refined flavor. These world-class coffee beans are put into alcohol to create a coffee liquor. Kona coffee is characterized by its low acidity, low bitterness, and strong aroma, and its rich flavor matches that image.

ハワイ島にある、ハワイアンの聖地マウナケア山に降る雪や雨は火山岩に濾過されて柔らかく清らかな水になり、私たちの酒蔵のあるHapuna（ハワイ語で命の水の湧くところの意味）でお酒として生まれ変わります。富士山より高い４０００メートルの山から吹き下ろす爽やかな風はプルメリアの香りを乗せて酒蔵に届きます。私たちはその風で米を冷ましタンクに投入しています。ハワイの雄大な自然の中で世界で一番癒される酒を作っています。酒米は北海道のきたしずくを使い、ハワイらしい南国の香りの中に深いコメの味わいを探すことが出来るでしょう。

Hapuna (a Hawaiian term meaning "a place where the water of life springs"), where our brewery is located. The refreshing winds descending from the 4,000-meter-high peak—taller than Mount Fuji—carry the scent of plumeria, gently cooling the rice before it is added to the brewing tanks. In the grandeur of Hawaii's natural beauty, we craft what we believe to be the most soothing sake in the world. Using Kitashizuku, a premium sake rice grown in Hokkaido, this sake blends the tropical aromas of Hawaii with the profound flavors of rice.
