The brewery was founded in the early Meiji period by the founder, Tobei. The brand name comes from the fact that at the time of the company's founding, beautiful cherry blossoms were blooming in the grounds of a nearby shrine, and the founder Tobei was so moved by their beauty that he wished to create a sake as beautiful as the pale pink of cherry blossoms, naming it "Usuzakura" (light cherry blossoms). Since then, the traditional taste, technique, and spirit have been passed down from generation to generation. Using high-quality water that springs from the Suzuka mountain range and carefully selected raw rice harvested in Shiga Prefecture, we strive to bring out the natural flavor of the rice to the fullest, carefully selecting small amounts, and to produce high-quality, delicious sake, striving to provide everyone with the finest luxury item, woven together by water, rice, and the skills of our master brewers.
