Founded in the early Meiji period by the founder, Tobei, the brewery's founder, Tobei's founder, was inspired by the beautiful cherry blossoms that bloomed in the grounds of a nearby shrine at the time of its founding. The founder, Tobei, was so moved by their beauty that he wished to create a sake as beautiful as the pale color of the cherry blossoms, naming it "Usuzakura" (Light Cherry Blossoms). Since then, the traditional taste, techniques, and spirit have been passed down through the generations. Using high-quality water from the Suzuka Mountains and carefully selected rice harvested in Shiga Prefecture, we strive to maximize the rice's natural flavor, carefully selecting small amounts, and producing high-quality sake. We strive to offer everyone the finest quality sake, woven together with water, rice, and the skills of our master brewers.
