Seitsuru Sake Brewery was founded in 1856 (the third year of the Ansei era). Located in Tondacho, Takatsuki City, Osaka, where sake brewing was as prosperous as Itami during the Edo period, the brewery continues to carry on the tradition of "Tonta Sake" to this day. The brewery's philosophy is to produce sake that is "smooth on the palate, fragrant, and leaves a rich, lingering aftertaste." Seitsuru is made using traditional hand-brewing methods, and the mash is also pressed using time-consuming bag and vat pressing processes, so production is limited. However, it is popular for its harmonious flavor of the five tastes: sweet, sour, bitter, astringent, and spicy.
