Seizo Sake Brewery was founded in 1856. Located in Tonda-cho, Takatsuki City, Osaka, where sake brewing was as prosperous as Itami during the Edo period, the brewery continues to carry on the tradition of "Tonta Sake" to this day. The brewery's philosophy is to make sake that is "smooth on the palate, fragrant, and leaves a rich aftertaste." Seizo's famous sake is made using traditional hand-brewing methods, and production is limited because the mash is pressed using time-consuming bag and tank pressing methods, but it is popular for its well-balanced taste of the five tastes: sweet, sour, bitter, astringent, and spicy.
