Kiyotsuru Sake Brewery was founded in 1856. It is located in Tomita-cho, Takatsuki City, Osaka, an area that was as prosperous for sake brewing as Itami during the Edo period, and continues to uphold the tradition of "Tomita Sake" today. Their philosophy is to brew sake that is "smooth on the palate and down the throat, highly aromatic, and leaves a rich, lingering aftertaste." Their renowned sake, "Kiyotsuru," is made using traditional, handcrafted methods, and production is limited because the mash is pressed using time-consuming bag pressing and vat pressing methods. However, it is popular for its well-balanced flavor with the five tastes of sweet, sour, bitter, astringent, and spicy.
