Chikusen is a local sake brewery founded in 1702 (Genroku 15). The "bamboo" (take) comes from the name of the clear waters of the Maruyama River, known as the "Bamboo River," and the "spring" (izumi) comes from the fact that the brewery's ancestors were from Kunidajime Village in Izumi (now Tajime-cho, Kishiwada City, Osaka Prefecture). The name was chosen to express gratitude to the region and respect for the brewery's ancestors. Based on the belief that "every grain of rice has infinite power," the brewery brews sake that fully brings out the flavor of each grain of rice and enhances meals. Chikusen's concept is "warm sake that matures while eating." The brewery produces all pure rice using only local rice and rice koji.
