Originally a merchant family operating a hair oil and candle shop in Hida Takayama since the Edo period, the Hirata Brewery has continued its meticulous small-batch sake brewing since the 5th generation established a sake brewery during the Meiji era, guided by the motto "Sake is something that is brewed and nurtured." Currently, they offer a range of flavorful sakes with roots in both Ise and Hida. One of Hirata Brewery's new brands, "Takayama," derives its name from the historical fact that it was the name of the present-day Shiroyama (castle mountain) before the Sengoku period, reflecting a commitment to learning from the past while embracing the new.
