Located east of Lake Biwa in Aisho Town, Shiga Prefecture, Kuramoto Fujii Honke is a sake brewery founded in 1831. The water that determines the flavor of the sake comes from underground water from the Suzuka Mountains, and the sake is made using newly harvested rice from Shiga Prefecture that is ideal for sake brewing, and is brewed by Noto Toji and the brewers. One of their brands, "Asahi," comes from the phrase "Kyokujitsu Shoten," which means "rising sun," meaning vigorous energy. They produce a variety of "Asahi" sakes with different rice varieties and flavors, including Junmai Daiginjo made from luxuriously polished sake rice, aged sake that has been aged for over 30 years, and seasonal recommendations.
