"Sake brewing without heaven" is the brewery's standard. Their umami-rich Junmai sake, made from pure, soft water nurtured in natural forests and rice grown locally in Tottori, is highly acclaimed as the perfect accompaniment to food. The brewery has long recognized the value of aging to bring out flavor and mellowness, and even their standard Junmai sake is aged for several years before shipping. "Toki no Tabi" is a series of Junmai aged sake that has been aged at room temperature in the brewery for over 20 to 30 years. Sake that has been aged for such a long time, with an amber color, rarely appears on the market, making it truly rare. We invite you to experience this premium taste, which can be described as a work of art etched by time.
