"Sake brewing without heaven" is the brewery's standard. This umami-rich Junmai sake, made from pure, soft water nurtured in natural forests and rice from the local Tottori region, is highly acclaimed as the perfect accompaniment to food. Suwaizumi's Junmai Daiginjo "Ho" is featured in the manga "Natsuko no Sake" and has even been selected as the sake for JAL's first class. Yamadanishiki rice is polished to 40%, and the sake is brewed with meticulous attention to detail in every step, making it a work of art. After pasteurization in the bottle, it is aged for over three years in a refrigerator at 5°C, evolving into a mellow flavor with a harmonious balance of acidity, sweetness, and bitterness while retaining the ginjo aroma.
