Founded in 1859, Suwa Brewery, located in Chizu Town, a member of the Association of Japan's Most Beautiful Villages, brews pure rice sake using soft water collected from cedar trees, and nurtured by the local rice, people, and climate of Tottori Prefecture. They offer moments of relaxation, enhanced by the magic of time. Based on the equation "Pure Rice Ginjo x Aging x Warmth x Cuisine," Suwa Brewery's brewing process is characterized by the addition of aging to water, rice, and technique. Their pure rice sake is aged for two summers, while their Junmai Daiginjo, Otori, is aged for over three years in a refrigerator, resulting in a mellow flavor. Sake is a pure alcoholic beverage made from rice and water. That's why they believe the water and rice from Chizu Town, as well as the koji mold, yeast, and lactic acid bacteria involved in the brewing process, are crucial. The umami of sake can be more fully appreciated when warmed, making food even more delicious.
