Founded in 1859, our brewery in Chizu Town, a member of the Association of Japan's Most Beautiful Villages, brews Junmai sake using soft water collected from cedar drops and the rice, people, and climate of Tottori. We offer a moment of relaxation, immersed in the magic of time. Based on the formula of "Junmai Ginjo x Aging x Warming x Cuisine," Suwa Sake Brewery's brewing process is characterized by adding aging to water, rice, and technique. Junmai sake is aged for over two summers, while Junmai Daiginjo Hou is aged in the refrigerator for over three years, resulting in a mellow sake. Sake is a pure alcoholic beverage made from rice and water. This is why we believe that the water and rice from Chizu Town, as well as the koji mold, yeast, and lactic acid bacteria involved in sake brewing, are so important. The umami of sake is enhanced by warming it, enhancing the flavor of food.
