Founded in 1859. In a brewery in Chizu Town, a member of the Most Beautiful Villages in Japan, we brew Junmai sake made with soft water collected from cedar drops, and the rice, people, and climate of Tottori, and we offer a time to relax your mind by casting the magic of time. Based on the formula of "Junmai Ginjo x Aged x Warm x Cuisine", Suwa Sake Brewery's brewing method is characterized by adding aging to water + rice + technology. Junmai sake is aged for two summers, and Junmai Daiginjo Ho is aged in the refrigerator for more than three years, which makes the sake mellow. Sake is a pure alcoholic drink made from rice and water. That is why we believe that the water and rice from Chizu Town, which are the raw materials, as well as the koji mold, yeast, and lactic acid bacteria involved in sake brewing, are important. The umami of sake can be felt more fully by heating it, making food even more delicious.
