Founded in 1899 (Meiji 32), the brewery chose the name "Echizen Misaki," a scenic spot, from the desire to make this Fukui prefecture's local sake familiar to locals. Just as the Echizen daffodil, Fukui's prefectural flower, blooms at Echizen Cape in winter despite the wind and snow, the name embodies the desire to persevere and work diligently to make sake. Despite being a small brewery, they continue to brew sake using traditional, physically demanding methods, such as steaming rice in a traditional Japanese pot, making koji by hand, and using the ancient method of pressing sake in a vat.
