Founded in 1899 (Meiji 32), the brewery chose "Echizen Cape," a scenic spot in Fukui Prefecture, as its brand name, hoping that it would be a local sake enjoyed by the people of the region. The name reflects the brewery's desire to persevere and dedicate itself to sake brewing, just as the Echizen narcissus, the prefectural flower of Fukui, blooms on Echizen Cape in winter, enduring the wind and snow. Despite being a small brewery, it continues to uphold traditional sake brewing methods that require physical effort, such as steaming rice in a traditional Japanese cauldron, making koji by hand, and using the old-fashioned pressing method called funeshibori.
