Founded in 1899 (Meiji 32), the brewery chose the name "Echizen Misaki," a scenic spot, from the desire to make the brewery familiar to locals as a local Fukui sake. Just as the Echizen Daffodil, Fukui's prefectural flower, blooms at Echizen Misaki in winter while enduring the wind and snow, the name is imbued with the desire to persevere and work hard at sake brewing. Although the brewery is small, it continues to brew sake in the traditional, physically demanding way, using techniques such as steaming rice in a Japanese pot, making koji by hand, and pressing the sake in a tank, an ancient method.
