創業1864（元治元）年の花の舞酒造が辿り着いたのが、静岡県産米を100％使用した酒造りです。先人たちの築きあげた技術と精神を基本としながら、新たな日本酒の価値を創出します。その名は天竜川水系に古来より伝わる奉納踊りのひとつ「花の舞」に由来します。「花」は命の糧となる稲の花を表し、五穀豊穣を祈願するものです。

花の舞アビスは「洋食に合う日本酒を造る」というコンセプトから、通常の日本酒造りに使われる清酒酵母ではなく、フランスのブルゴーニュ地方シャブリの白ワイン酵母を使用。ワインのような酸味とほのかな甘みが特徴で、柑橘類にも似たフレッシュな香りと深く複雑な味わいを生み出しています。10℃の温度変化の中で味わいを大きく変える花の舞アビスは、旬の素材を活かした料理と抜群の相性を生み出します。低温では心地よい酸味や軽快な苦味が素材の甘さを引き立て、温度の上昇とともに米の旨味を感じ、柑橘系のニュアンスが料理に爽快感を与えます。

フランスブルゴーニュの白ワイン酵母を使用することで柑橘類にも似たフレッシュな香りや瓶内二次発酵由来の甘く香ばしい香りと深く複雑な味わいが特徴的です。濃淳なアビス原酒を瓶内二次発酵させる事により、アビスに相応しい理想的な泡を表現しています。ガス圧は一般的なスパークリングワインと同じ3GV（ガスボリューム）に設定しており、本格的な発泡性日本酒といえます。　　

By using white wine yeast from Burgundy, France, this sake features fresh citrus-like aromas and sweet, toasty notes derived from secondary fermentation in the bottle, resulting in a deep and complex flavor. By inducing secondary fermentation in the bottle of the rich Abysse genshu, we've achieved ideal bubbles worthy of the Abysse name. The gas pressure is set at 3GV (gas volume), the same as typical sparkling wines, making it an authentic sparkling Japanese sake.

地元契約農家の山田錦と静岡酵母を使用した純米大吟醸。低温でゆっくりと発酵させる事により、鋭いキレと洗練された米の旨味がしっかりと感じられます。飲み込んだ後にふわりとした蒸米の香りと共に、酵母由来の若いバナナやブドウの香りが心地良い余韻を与えます。

A Junmai Daiginjo brewed using contract-grown Yamadanishiki from the local area and Shizuoka yeast. By fermenting slowly at low temperatures, you can fully appreciate the sharpness and refined rice umami. After swallowing, the gentle steamed rice aroma and youthful banana and grape scents derived from the yeast provide a pleasant aftertaste.

静岡県産山田錦にこだわった純米吟醸酒の旨味をさらに追及しました。新鮮でフルーティなバナナを思わせる味わいと、米を思わせるクリーミーな味わいが融合し、吟醸酒ならではのゆったりとした奥深い旨味を秘めた原酒です。

We've further pursued the umami of Junmai Ginjo sake made with a focus on Shizuoka Prefecture's Yamadanishiki. It's a genshu that combines a fresh, fruity banana-like flavor with a creamy taste reminiscent of rice, embodying the profound umami unique to Ginjo sake.

The result is a sake with wine-like acidity, a subtle sweetness, and a fresh, citrus-like aroma. This complex brew offers a transformative experience with temperature changes, unveiling a pleasant tartness and bitterness at cooler temperatures, while warmer conditions enhance umami and citrus nuances. Perfectly suited for seasonal dishes, it complements and elevates their flavors.

The rich Abysse genshu undergoes secondary fermentation in the bottle to achieve ideal effervescence, with carbonation levels (3GV) matching those of traditional sparkling wines. This sake is a luxurious and authentic sparkling experience, blending robust flavors and complexity with a lively and refreshing texture.

A Junmai Daiginjo made from locally sourced Yamadanishiki and Shizuoka yeast. Slow fermentation brings out the refined umami and a smooth aroma of steamed rice, banana, and grape.
