Founded in 1804, the brewery was originally designated as a purveyor of sake to the Mimasaka-Katsuyama domain and received the name "Gozenshu" (the origin of the current brand name). Currently, the seventh-generation brewery owner, Soichiro Tsuji, and his older sister, Maiko, serve as master brewers, revitalizing the brewery. Located in Mimasaka (the former name of northern Okayama Prefecture), a region historically known as the "land of delicious sake," the brewery enjoys a favorable environment for sake brewing, with a cold climate and high-quality sake rice and water. They are committed to using local rice, specifically Omachi rice from Okayama Prefecture, to brew their sake. It is the only brewery in Japan that produces 100% Omachi rice. Another distinctive feature is their pioneering revival of the Bodaimoto brewing method.
