Founded in 1804, the brewery was given the name "Gozenshu" (the origin of the current brand name) as a tribute sake to the Mimasaka Katsuyama Domain. Currently, the 7th generation brewer Soichiro Tsuji and his sister Maiko are the chief brewers and are running the brewery. In this area of Mimasaka (the former name of the northern part of Okayama Prefecture), which has long been known as the "Land of Delicious Sake," the brewery is blessed with favorable conditions for sake brewing, including a cold climate and high-quality sake rice and water, and brews sake using local rice, Omachi, grown in Okayama Prefecture. It is the only brewery in Japan that produces only Omachi sake. Another feature is that it was the first in the country to use bodaimoto sake, which was revived.
