Founded in 1805, Kamisugi Sake Brewery uses 100% rice from Aichi Prefecture and pursues the creation of unique and rich local sake. While winning awards in competitions is important for a sake brewery, they questioned the fact that similar sakes were being produced all over the country in order to win awards. In order to perfect authentic local sake, they sealed away "Yamada Nishiki," the king of sake rice that they had been sourcing from Hyogo Prefecture, and have been using only rice from Aichi Prefecture for over five years. They have faced many challenges battling with the strong character of Aichi's sake rice, but as a result, they achieved the remarkable feat of winning an award at the National New Sake Appraisal Competition with an Aichi variety. They will continue to create one-of-a-kind sake.
