Founded in 1805, Kamisugi Sake Brewery uses all rice grown in Aichi Prefecture, and strives to produce distinctive, rich local sake. Winning a contest is important for a sake brewery, but they have had doubts about the fact that similar sake is brewed all over the country in order to win awards. In order to perfect genuine local sake, they stopped using Yamada Nishiki, the king of sake rice that they had been ordering from Hyogo, and have been using only rice grown in Aichi Prefecture for over five years. It was a constant struggle to work with Aichi's sake rice, which has a strong character, but as a result, they were able to achieve the great feat of winning an award at the National New Sake Tasting Competition with an Aichi variety. They will continue to brew unique sake.
