At Kamisugi Brewery, which uses 100% rice from Aichi Prefecture, we pursue the creation of unique and rich local sake. The concept behind our popular brand "Jinsei Gekijo" (Life Theater), which is well-regarded by sake lovers, is maturation. By dissolving the rice as much as possible to minimize the amount of lees produced, we create a raw sake with the unique characteristics of each year. This raw sake, in which the umami of the rice is concentrated, is stored for a long period of time and then blended to create the finished product. Originally created as a sake that would pair well with Nagoya cuisine, it has evolved into a robust flavor that can be enjoyed with a wide range of richly flavored dishes.
