空に舞う美しい鶴にのり大空を翔けるような夢から生まれた日本酒「空の鶴」豊かな海の幸に恵まれた播磨灘を望む兵庫県明石市の西部、西国街道の情緒あふれる道沿いに空の鶴の酒蔵があります。西海酒造は創業1716年で300年以上にわたり「唯一無二の品質と歴史」を守り続け、今の当主は九代目の西海 太兵衛を襲名しており、十代目とともに酒米栽培から精米・醸造・販売まで風土の魅力を活かした自社一貫体制の酒造りをしています。

空の鶴【西海酒造】

米は酒米として最高峰といわれる山田錦を自家水田において栽培しております。水田の環境からこだわり、化学肥料は一切使用せず、レンゲによる緑肥と米ぬかの有機質肥料のみで土を作り、殺虫剤などでの病害虫の予防も一切使用せず、安心安全な酒米を収穫しています。酒造りでは雑味の元となる表層部分を十分に磨いたお米を使用し、低温で長時間発酵、そしてあえて十分に搾りきらないという贅沢な製法を用いています。使用する仕込水も敷地内にある井戸より良質の地下水を汲み上げています。手間暇かけて雑味を徹底的に除去する事により、ふくよかな味とフルーティーな香りのする透き通ったような深い味わいとなっています。

Using Yamadanishiki, considered the pinnacle of sake rice, which is cultivated in their own rice paddies. Special care is given to the environment, with no chemical fertilizers used. The soil is enriched using organic green manure such as rice bran and legumes. Insecticides are not used for pest control, ensuring safe and natural rice. The rice is polished to remove impurities, and fermentation is done slowly at low temperatures. The sake is crafted with meticulous attention to detail, resulting in a rich flavor with a fruity aroma and a deep, clear taste. The water used for brewing is high-quality groundwater from a well within the brewery premises.

This daiginjo is made with Yamadanishiki rice, regarded as the best for brewing sake, cultivated in Nishiumi Shuzo�fs own rice fields. The brewing process emphasizes environmental responsibility, with no use of chemical fertilizers and organic farming methods like green manure. The rice is polished thoroughly to remove unwanted layers, and fermentation occurs slowly at low temperatures. The result is a harmonious balance of fragrance and rich flavor, where the sake is brewed with rice-derived alcohol for enhanced aroma and smoothness without compromising the flavor.

This special junmai sake is brewed using the same high-quality Yamadanishiki rice used for daiginjo sake, cultivated on the brewery's own fields. No chemical fertilizers or insecticides are used. The rice undergoes thorough polishing, and the sake is carefully fermented at low temperatures, using well water from the brewery's premises. The result is a clear, crisp flavor with an umami richness that unfolds beautifully on the palate.

特別純米酒　鶴

米は山田錦と兵庫北錦を自家水田において栽培しております。水田の環境からこだわり、化学肥料は一切使用せず、レンゲによる緑肥と米ぬかの有機質肥料のみで土を作り、殺虫剤などでの病害虫の予防も一切使用せず、安心安全な酒米を収穫しています。酒造りでは吟醸クラスと同じお米を使用し、じっくりと発酵させ、そしてあえて十分に搾りきらないという贅沢な製法を用いています。使用する仕込水も敷地内にある井戸より良質の地下水を汲み上げています。手間暇かけて雑味を徹底的に除去する事により、飲んでうまいと思える味わいとなっています。

Using both Yamadanishiki and Hyogo Kitashizuku rice, cultivated without chemical fertilizers or pesticides, Nishiumi Shuzo takes pride in brewing this honjozo sake by carefully fermenting the rice and water from its well. The sake is undiluted, showcasing the full-bodied flavor of the rice with a clean finish. The brewing process retains the natural flavor of the rice, providing an intense and refined taste that pairs well with various cuisines.
