"Sora no Tsuru" is a sake born from the dream of soaring through the skies on a beautiful flying crane. The Soranotsuru brewery is located along the atmospheric Saigoku Kaido road in the west of Akashi City, Hyogo Prefecture, overlooking the Harima Nada Sea, which is blessed with bountiful seafood. Nishikai Shuzo was founded in 1716 and has continued to protect its "unique quality and history" for over 300 years. The current head of the family, Nishikai Taibei, is the ninth generation, and together with the tenth generation, they brew sake in an integrated system that makes use of the charm of the local climate, from growing sake rice to polishing, brewing, and sales.
