Founded in 1620 by the first generation Jinbei Mugiya, our company has been brewing sake in Ono City, Fukui Prefecture for approximately 400 years. The brand name "Ichinotani" comes from a haiku composed by a Kyoto haiku poet who visited during the early Meiji period. Using groundwater selected as one of Japan's 100 best waters and high-quality rice, we prioritize quality and produce our sake slowly and carefully, rather than mass-producing it. Every year, we win awards at numerous competitions, including the National New Sake Appraisal and the Kanazawa Regional Taxation Bureau Sake Appraisal.
