Founded in 1620 by the founder Mugiya Nihei, we have been brewing sake in Ono City, Fukui Prefecture for about 400 years. Our brand name "Ichinotani" was named after a haiku poem that a haiku poet from Kyoto read when he stopped by in the early Meiji period. We use groundwater that has been selected as one of the 100 famous waters in Japan and high-quality raw rice, and we do not mass-produce our sake, but instead carefully brew it with quality as our number one priority. Every year, we win awards at many competitions, such as the National New Sake Tasting Competition and the Kanazawa Regional Taxation Bureau Liquor Tasting Competition.
