Founded in 1894, this brewery is located at the northern end of the Nobi Plain in Gifu Prefecture. Using underground water from the clear Nagara River that flows under the brewery and Gifu sake rice "Hida Homare," the brewery brews local sake named after the Nagara River, famous for its traditional cormorant fishing. Gifu is a region rich in red miso culture. Their sake is known for its comforting, savory flavor, perfectly matched to this food culture, and they adhere to the traditional technique of complete fermentation to maximize the rice's umami. They are also known for "brewing sake with music playing," playing ambient music in the brewery to stimulate alpha waves and stimulate fermentation. They quickly began exporting, shipping their sake overseas, primarily to the United States and Singapore, and their brands are beloved around the world.
