Founded in 1894, this brewery is located at the northern edge of the Nobi Plain in Gifu Prefecture. Using the pure groundwater of the Nagara River that flows beneath the brewery and Gifu's sake rice "Hida Homare," they brew a local sake named after the Nagara River, famous for its traditional cormorant fishing. Gifu is a region with a strong red miso culture, and their sake is characterized by its comforting umami flavor that suits this food culture. They are committed to complete fermentation using traditional techniques, maximizing the umami of the rice. They are also known as a brewery that "brews sake with music playing," playing ambient music that induces alpha waves to activate fermentation. They were also early exporters, mainly shipping to the United States and Singapore, and their sake is enjoyed worldwide.
