"Tenka no Shisei" (天下至聖) originates from the phrase "Only the most sage in the world can be intelligent and wise..." (Chapter 31) in the Doctrine of the Mean, attributed to Zisi, the grandson of Confucius. "Tenka no Shisei" means a sage possessing the highest virtues, and in China, the term "sage" sometimes refers to sake. From this, we derived the meaning of "Tenka no Shisei" as the finest sake, comparable to that of heaven, and named it accordingly. "Kiwami Hijiri Junmai Daiginjo Tenka no Shisei" is a sake made using Omachi rice with a polishing ratio of 20%. Omachi rice, the root of sake rice, has large grains and a large, spherical white core, so with existing polishing techniques, the limit was around 38%. However, using a newly developed, state-of-the-art rice milling machine and improved Omachi rice, we challenged ourselves to achieve the ultimate milling process, succeeding in polishing the rice to its original form down to a milling ratio of 20%. This is the world's first attempt with Omachi rice, and by completely removing the proteins and lipids that cause off-flavors, we have created a sake with a completely new taste.
