The name "Tenka no Shisei" (The Most Holy in the World) comes from the phrase "Only the most holy man in the world is wise and intelligent..." (Chapter 31) in the Doctrine of the Mean, said to have been written by Confucius' grandson, Zisi. "Tenka no Shisei" means a saint endowed with the highest virtues, and in China, saint sometimes refers to sake. From this, "Tenka no Shisei" (The Most Holy in the World) was chosen to convey the meaning of the finest sake, comparable to the heavens. "Kiwami Hijiri Junmai Daiginjo Tenka no Shisei" is a sake made with Omachi rice, polished to 20%. Omachi rice, the root of sake rice, is large-grained with a large, spherical core, so existing rice polishing technology could only achieve a polishing ratio of around 38%. However, by using a newly developed, state-of-the-art rice polishing machine and improved Omachi rice, they took on the challenge of polishing to the limit and succeeded in polishing to a rice polishing ratio of 20%. This was the first attempt in the world to do this with Omachi rice, and all of the proteins and lipids that cause off-flavors were removed, resulting in a sake with a new level of flavor.
