"Junmai Daiginjo Rakusei Omachi Rice 15% Polished" is a Junmai Daiginjo sake made with Omachi rice with a 15% polishing ratio. Omachi rice is a specialty of Okayama Prefecture and is said to be the root of sake rice. Due to its large grains and spherical core, it is prone to cracking, making it difficult to polish to a polishing ratio of around 40%. However, thanks to technological innovations, state-of-the-art rice polishing machines and improved Omachi rice for easier polishing, in 2015 we developed and began selling "Gokusei Junmai Daiginjo Tenka no Shisei," which is polished to a 20% polishing ratio. Our quest to achieve the ultimate polishing ratio for Omachi rice has continued, with repeated research and careful, time-consuming polishing to continuously improve accuracy. Finally, we have succeeded in polishing it to a polishing ratio of 5% from 20%. "Junmai Daiginjo Rakusei Omachi Rice 15% Polished" is the world's first* ultra-high-polished sake made from Omachi rice. "Junmai Daiginjo Rakusei Omachi Rice 15% Polished" is an otherworldly sake born from the ultimate sake brewing process, and will transport you to a world where saints (wise men) from ancient times enjoyed sake in a state of ecstasy.
