"Junmai Daiginjo Rakusei Omachi Rice 15% Polished" is a Junmai Daiginjo sake made with Omachi rice polished to 15%. Omachi rice is a sake-brewing rice variety special to Okayama Prefecture and is said to be the root of sake rice. Because it has large grains and a large, spherical white core, it is prone to cracking, making it difficult to polish it to its original form beyond a polishing ratio of around 40%. However, thanks to technological innovations such as state-of-the-art rice polishing machines and Omachi rice that has been improved to be easier to polish, in 2015 we developed and began selling "Gokusei Junmai Daiginjo Tenka no Shisei," which was polished to its original form down to a polishing ratio of 20%. The challenge of polishing Omachi rice to its absolute limit has continued since then, with research and continuous improvement in precision through careful polishing over time. And finally, we have succeeded in polishing it to its original form by another 5% from a polishing ratio of 20%. "Junmai Daiginjo Rakusei Omachi Rice 15% Polished" is the world's first (※) ultra-high polished sake made from Omachi rice. "Junmai Daiginjo Rakusei Omachi Rice 15% Polished" is an otherworldly sake born from the ultimate in sake brewing, and it will transport you to a world where, in ancient times, saints (sages) enjoyed sake in rapture.
