"Junmai Daiginjo Rakusei Omachi Rice 10.5% Polished" is a Junmai Daiginjo sake made with Omachi rice with a polishing ratio of 15%. Omachi rice is a specialty of Okayama Prefecture that is suitable for sake brewing and is said to be the root of sake rice. Because it is large and has a large spherical core, it is prone to cracking, and it was difficult to polish it to its original state only up to about 40%. However, thanks to technological innovation and the latest rice polishing machines and Omachi rice that has been improved to be easier to polish, in 2015 we developed and started selling "Gokusei Junmai Daiginjo Tenka no Shisei", which is polished to its original state up to 20%. We continued to research the ultimate polishing of Omachi rice, and by polishing it carefully over time, we continued to improve the accuracy. Finally, we succeeded in polishing it to its original state by an additional 5% from the polishing ratio of 20%. The world's first (※) ultra-high-polished sake made from Omachi rice is "Junmai Daiginjo Rakusei Omachi Rice 10.5% Polished." "Junmai Daiginjo Rakusei Omachi Rice 10.5% Polished" is a different dimension of sake born from the ultimate sake brewing process, and will take you to a world where saints (wise men) enjoyed sake in the ancient past.
