Assemblage Club is a Japanese sake made by assemblage developed and produced by Leaf Publications Co., Ltd. and three sake breweries in Kyoto. Assemblage refers to the traditional technique of blending raw liquors in wine, and is the mainstream method of making wine in France, Italy, Spain, etc. Bordeaux wine and Champagne have been representative of the world, both now and in the past, because they have complex flavors and aromas that can only be created by combining different ingredients. It has become clear that there are flavors in Japanese sake that can only be produced by assemblage, such as layering flavors and rounding off corners. In addition to the fermentation techniques of the brewers, assemblage techniques can further expand the flavor of Japanese sake.
