After two years of challenging themselves to submit junmai sake, they won their first gold medal with junmai daiginjo in the 2022 brewing year. The brewing water used is groundwater from the Serikawa River in the Suzuka Mountains, a unique water with a hardness of 180 mg/L, yet with components other than calcium being comparable to soft water. Based on sake with a light and clean taste that makes the most of the characteristics of the water, they produce local sake that can be enjoyed by local people, with a wide lineup ranging from junmai daiginjo to regular sake.
