This small brewery quietly continues its sake brewing traditions in the mountains of Nakatsugawa, Gifu Prefecture, at an altitude of 600 meters. They carefully brew sake using rice grown in terraced rice paddies and pure spring water. Sake brewing with rice from the terraced paddies began in 1818, and after a period of migrant master brewers, the brewery owner now serves as the production manager. They aim to create sake that is loved by the local community, mainly focusing on junmai sake made with sake rice from Gifu Prefecture. The brewery was named Kujiranami (Whale Wave) because the clouds flowing over the mountains resembled whales swimming in the ocean, given its high altitude overlooking the Central Alps.
