This small brewery quietly continues to make sake in the mountains of Nakatsugawa, Gifu Prefecture, at an altitude of 600m. They carefully brew sake using sake rice grown in terraced fields and spring water. They began making sake in 1818 using rice from the terraced fields, and after working as a migrant brewer, the brewery owner is now in charge of production. They aim to make sake that is loved locally, focusing on pure rice sake, mainly made with sake rice grown in Gifu Prefecture. As the brewery is located at an altitude overlooking the Central Alps, the clouds flowing over the mountains resemble whales swimming in the ocean, so they named it Kujiranami (Whale Wave).
