This small brewery quietly continues to make sake at an altitude of 600m in the mountains of Nakatsugawa, Gifu Prefecture. They produce carefully brewed sake using sake rice grown in terraced rice fields and pure spring water. They began making sake using rice from the terraced rice fields in 1818, and after working as a migrant brewer, the brewery owner now serves as production manager. They aim to produce sake that is loved locally, focusing on pure rice sake made primarily from sake rice grown in Gifu Prefecture. The brewery is located at an altitude overlooking the Central Alps, and the clouds that flow over the mountains resemble whales swimming in the ocean, so they named it Kujiranami (Whale Wave).
