Founded in 1849 as a sake brewery, the brewery has thrived as a producer of superior sake, brewed using the natural beauty and techniques of Tamba. The brewery's reputation continues to this day for its perfect combination of locally grown rice from Hyogo Prefecture, ultra-soft well water from the premises, and the skills of its Tamba master brewers. Throughout the generations, the brewery has had close ties with literary figures, and has been beloved by many cultural figures, including haiku poet Takahama Kyoshi. Three of the buildings on the premises have been designated as registered tangible cultural properties. The brewery's signature product, "Kotsuzumi," a sake named after Takahama Kyoshi, is a four-season sake brewery, and the brewery continues to create new products while preserving tradition, based on its policy of "creating delicious sake using high-quality ingredients and the simplest possible ingredients." The brewery has received high praise both from within Japan and overseas, winning numerous competitions and spreading new values and promoting sake culture.
