Founded in 1849 as a sake brewery, it has prospered as a brewery that brews excellent sake using the nature and techniques of Tamba. The brewery has been known to this day for its perfect taste, using locally grown rice from Hyogo Prefecture, the super soft well water on the premises, and the skills of the Tamba master brewers. For generations, the brewery has had close ties with literary figures and is loved by many cultural figures, including haiku poet Takahama Kyoshi, and three of the buildings on the premises have been designated as registered tangible cultural properties. The brewery has continued to brew sake for generations, with seasonal brewing being the representative product of the sake "Kotsuzumi," named by Takahama Kyoshi, and the brewery continues to create new products while preserving tradition, with the policy of "making delicious products using high-quality ingredients and the simplest possible ingredients." The brewery has received high praise both from within Japan and overseas, winning numerous competitions and spreading the culture of sake along with new values.
