According to documents remaining from our family's sake trade, our family was founded in 1695 (Genroku 8). This was around the time when Hida came under direct control of the shogunate and the shogunate ordered the demolition of Takayama Castle. Since the family originally lived in Ishikawa Prefecture, the store's name was "Kagaya," and the "Kagaya" name is even dyed on the curtain at the entrance. The current head of the family is the 16th generation of the long-established store. The name "Himuro" comes from the fact that the finished sake was shipped "raw" without adding heat, using the brewery's unique storage method and product management.
