According to documents on sake trading preserved in our family, our business was founded in 1695 (Genroku 8). This was around the time when the Hida region became a direct territory of the shogunate and the shogunate issued an order to demolish Takayama Castle. Since we originally lived in Ishikawa Prefecture, our family business name is "Kagaya," and the name "Kagaya" is dyed onto the noren (curtain) at our entrance. The current head of the family is the 16th generation, making it a long-established business. The name "Himuro" (ice house) comes from the fact that the finished sake was not heated and was shipped in its "raw" state, using the brewery's unique storage and product management methods.
