According to documents remaining from the family's sake trade, the family was founded in 1695 (Genroku 8). Located in Kaminomachi, an area known for its old streets, Niki Sake Brewery has been run by the 16th generation and has been dedicated to sake brewing ever since. The current building was rebuilt based on surviving Edo-period blueprints, after most of it was destroyed in a major fire at the beginning of the Meiji era. From the open-ceilinged earthen floor with thick beams to the earthen storehouse-style sake storehouse, the structure and layout of the building all point to vestiges of the Edo period, when the "craftsmen of Hida" were highly esteemed. The clear well water in the center of the house was used for sake brewing, and the sake's name "Tamanoi" was chosen in honor of this.
