"Sake brewing without regard for the heavens" is the brewery's motto. Made from pure, soft water nurtured by natural forests and locally grown Tottori rice, their flavorful junmai sake is highly regarded as the perfect accompaniment to food. The junmai daiginjo "Otori" is the pinnacle of Suwaizumi, appearing in the manga "Natsuko no Sake" and having been selected as the sake served in JAL's first class. This exquisite sake is a work of art, brewed with meticulous attention to detail in every step of the process, using Yamada Nishiki rice polished to 40%. After pasteurization in the bottle, it is aged for over three years in a 5°C refrigerator, allowing the ginjo aroma to remain while evolving into a mellow flavor with a harmonious balance of acidity, sweetness, and bitterness.
