This ingredient-focused Junmai sake is the result of a collaboration between a mountain farming group in Shimane Prefecture and a seaside brewery. Combining farming and fermentation, "Noukoshu" is a natural, simple, straightforward, and unadorned sake that expresses the rich essence of fermentation. The essence of fermentation is the dynamism (vitality, energy) of healthy microbial activity unfolding on the harvest produced in healthy soil, and the resulting chemistry (the power, action, and change resulting from the combination and reaction of individual characteristics). When people (brewers) harmonize with the natural flow, this chemistry transforms into deliciousness. The rice used is grown in soil where a diverse range of microorganisms, small animals, and plants coexist, under environmentally friendly farming practices.
