This pure rice sake, a collaboration between an agricultural group in the mountainous region of Shimane Prefecture and a brewery by the sea, is a pure rice sake that emphasizes the quality of its ingredients. "Noukoshu" (Agricultural Fermentation Sake) is natural, simple, honest, and unpretentious, a sake that richly expresses the essence of fermentation. The essence of fermentation is the healthy activity of microorganisms that unfolds on the stage of harvests born from healthy soil, its dynamism (vitality, momentum) and the chemistry (force, action, change resulting from the combination and reaction of individual characteristics) that arises from it. When people (brewers) harmonize with the flow of nature, the chemistry transforms into "deliciousness." The raw rice (rice plants) is grown in soil where diverse microorganisms, small animals, and plants coexist under environmentally friendly agriculture.
