The brewery was founded in 1730 (the 15th year of the Kyoho era) during the mid-Edo period, during the reign of the 8th Tokugawa Shogun, Yoshimune. The founder of our brewery, Tawaraya Choshichi, a rice wholesaler with a long history in Tsuwano, started the sake brewing business. The current head of the family is the 10th generation, and the current 11th generation is the master brewer. Since our founding, we have consistently strived to brew sake beloved by locals. We continue to pursue the true taste of Japanese sake, with a dry yet mellow flavor. We also maintain a strong commitment to our ingredients. We use the finest sake rice, including Yamada Nishiki and Sakanishiki from Tsuwano. We use underground water from the beautiful Aonoyama mountain range for brewing. We hope to continue creating Tsuwano's local sake, Kasen, through time-honored methods, from the past to the present and into the future.
