Founded in 1901 (Meiji 34), the brewery uses its own well water, sourced from the underground springs of the Ishizuchi Mountain Range, the highest peak in western Japan, as its brewing water. Without employing a master brewer, the brewing process is meticulously carried out by three family members, brothers, in a small-scale operation where everyone can oversee every step. The renowned "Sukishin" sake was named by the first generation owner, Shigezuke Shuto, with the wish that it be enjoyed by many at celebratory occasions.
