

Sukishin (aged sake) [Shuto Sake Brewery]

Founded in 1901 (Meiji 34), the brewery uses its own well water, which is fed by underground springs from Mount Ishizuchi, the highest peak in western Japan, as its brewing water. The brewery does not employ a master brewer, but instead carefully brews its sake with just three family members and siblings, and brews on a small scale so that everyone can keep an eye on everything. The sake's name, "Jukishin," was chosen by the first generation head brewer, Sudo Jusuke, with the hope that "it would be a joyous occasion where people could share a lot of sake together."
