Itakura Shuzo, the brewery of the sake "Ten'on" located in Izumo City, Shimane Prefecture, was founded in 1871. The name "Ten'on" was given to the brewery in 1916 by Sakamoto Gozen, the head priest of Yōhōji Temple, the head temple of the Nichiren sect, to which the family belongs, and is derived from the Buddhist phrase "Mugyū Ten'on" (eternal peace). Mugyū Ten'on means that if the heavens are peaceful, there will be no hardship (trouble), and it is a phrase that expresses the wish for peace in the world and its future. To create a pure and gentle taste like sacred sake, Ten'on is brewed using the traditional Izumo Toji technique called "San'in Ginjo-zōzō" (San'in ginjo brewing).
