Founded in 1872 (Meiji 5), the brewery is located in the eastern part of Tochigi Prefecture, with a dry climate and temperatures below freezing in winter. The brewery is one of the top in eastern Japan for the amount of Yamada Nishiki rice grown in Hyogo Prefecture's Special A region, and is unique in being able to use this rice in a wide range of products, from general to high-end sake. The brewery has long been involved in kimoto brewing and aging, and the careful and elegant aging that suppresses coloration and aroma is an essential keyword when talking about the soft and profound flavor of Soho's kimoto sake. While over 80% of all shipments are to Tochigi Prefecture, the brewery is also increasingly shipping kimoto products nationwide and worldwide. We recommend sipping the sake in a wide, deep-bottomed vessel.
