Founded in 1872 (Meiji 5), this brewery is located in eastern Tochigi Prefecture, where winters are below freezing and the climate is dry. A key feature of the brewery is its use of Yamada Nishiki rice from the Hyogo Prefecture Special A district, which is among the highest in eastern Japan. This rice is used in a wide range of products, from standard to premium sake. The brewery has a long history of using the kimoto brewing method and aging, and its careful and elegant aging process, which minimizes coloring and flavoring, is an essential keyword when discussing the soft and profound "Sohomare no Kimoto" sake. While over 80% of its total shipments are destined for Tochigi Prefecture, the brewery is increasing its shipments nationwide and worldwide, particularly of its kimoto products. It is recommended to drink it in a deep, wide-bottomed glass.
