Founder Denshiro Koganei started a small sake brewery with the sole desire to do business that would benefit society, which is the origin of today's sake brewing. At that time, the shop was called "Masuya," and later, with the meaning of increasing prosperity, it was named "Sakarimasu" (盛升). The brewery is located in the rich natural environment of Atsugi City, Kanagawa Prefecture, in an area blessed with water resources, surrounded by Nanasawa Onsen hot springs and local tofu shops. At Koganei Sake Brewery, the master brewer, who has inherited the techniques of Echigo Toji, incorporates new techniques to create a stable taste. In recent years, the number of awards in the ginjo sake category has increased, and the improvement in technique and consistency have been recognized.
