The founder, Denshiro Koganei, wanted to do business that would benefit society, and so he started a small sake shop, which is the origin of today's sake brewing. The shop name at that time was "Masuya," and he named it "Sakamasu" (morimasu) with the intention of continuing to prosper. The brewery is located in the lush nature of Atsugi City, Kanagawa Prefecture, an area blessed with water resources such as Nanasawa Onsen and local tofu shops. At Koganei Sake Brewery, the master brewers, who inherited the skills of Echigo Toji, incorporate new techniques to create a consistent taste. In recent years, the brewery has won an increasing number of awards in the Ginjo sake category, and is recognized for its improved techniques and consistency.
