Fujii Honke Brewery, founded in 1831, is a sake brewery located in Aisho-cho, Shiga Prefecture, east of Lake Biwa. They use groundwater from the Suzuka Mountains, which is essential for the taste of their sake, and newly harvested sake rice from Shiga Prefecture, with Noto master brewers and brewery workers handling the brewing process. One of their brands, "Asahi," is derived from the phrase "Kyokujitsu Shōten," which means "rising sun rising to the heavens," signifying great momentum. They produce a variety of "Asahi" sakes, including Junmai Daiginjo made with luxuriously polished rice, aged sake for over 30 years, and seasonal recommendations, each with different rice varieties and flavors.
