Located at the northern edge of the Kanto Plain, Sano City in Tochigi Prefecture is a town of water, greenery, and the Manyoshu era. It is home to the oldest sake brewery in Tochigi Prefecture, founded in 1673. Using the high-quality water of Sano City, which has been selected as one of Japan's 100 best waters, and sake rice cultivated by the brewers in their own rice paddies, they handcraft their sake using traditional small-batch brewing methods without relying on machinery, paying meticulous attention to every aspect of rice, water, and brewing. The result is a sake with a soft umami flavor and a rich, refined, and elegant aroma.
