Sano City, Tochigi Prefecture, at the northern end of the Kanto Plain, is a town of water, greenery, and the Manyo era. This is the oldest sake brewery in Tochigi Prefecture, founded in 1673. Using the high-quality water of Sano City, which has been selected as one of Japan's 100 famous waters, and rice suitable for sake brewing, which is cultivated by brewers in their own paddy fields, the brewery produces handmade sake with a focus on rice, water, and brewing in small batches without relying on machines, producing a soft flavor and a rich, refined, gorgeous aroma.
