山口県萩市（旧川上村）の山の中、景勝地「長門峡」の近くで大正13年より創業しておりましたが、昭和45年阿武川ダムの建設により、萩市の上流にあたる現在地に移転しました。長門峡（ちょうもんきょう）という酒名はこの景勝地の名前に由来します。維新の里を流れる長門峡の清流に育まれたお酒。米の旨味を最大限に引き出す事に徹し様々な料理とシーンに共鳴する人々に寄り添う酒造り。								

長門峡【岡崎酒造場】

岡山雄町を６０％まで削り、吟醸造りで丁寧に醸しあげたお酒。雄町独特な濃厚なあじわいと口あたりがまろやかな旨味のあるお酒です。令和2酒造年度に仕込んだお酒です。

Sake made from 60% Okayama Omachi grapes and carefully brewed in the ginjo style. This sake has a rich flavor unique to Omachi and a mellow, delicious taste on the palate. The sake brewed in the 2020 brewing year is limited to 100 bottles of 1.8L and stored fresh.

長門峡　特別純米　雄町 720ml

岡山雄町を６０％まで削り、吟醸造りで丁寧に醸しあげたお酒。雄町独特な濃厚なあじわいと口あたりがまろやかな旨味のあるお酒です。令和2酒造年度に仕込んだお酒を1.8Lで100本限定で生貯蔵。								

長門峡　特別純米　雄町 1800ml

平成元年の台風で伊勢神宮神田は甚大な被害を受け、西八号田のコシヒカリは完全に倒伏したのです。その中で２株のみ天に向け真っ直ぐ立つ稲株があり、それこそが新品種である「イセヒカリ」です。「神の米」として神殿より門外不出とされていました。現在、食米としても高い評価を受けるこの米を、自然農法に熱き志をもつ萩の農家藏田氏が育み、化学農薬・化学肥料不使用イセヒカリ米１００％の純米酒が誕生いたしました。穏やかな飲み口が特徴で酒造好適米ではないため、どちらかというと味わいはフラットな仕上がりになっているがベースには米に由来する旨みが感じられこの旨みが求心的に働くことで味に厚みとアクセントをつけています。

The Ise Jingu Kanda was severely damaged by a typhoon in 1989, and the Koshihikari rice plants in the Nishi-Hachi-go rice field completely collapsed. Only two of the rice plants stood straight up to the sky, and they were the new “Isehikari” variety. It was called “God’s rice,” and was considered to be forbidden to the public from the temple. The rice is now highly regarded as food rice, and is nurtured by Mr. Kurada, a farmer in Hagi who is passionate about natural farming methods, resulting in a pure rice sake made from 100% Isehikari rice that is free of chemical pesticides and fertilizers. The taste is characterized by a mild mouthfeel, and because it is not a rice suitable for sake brewing, it has a rather flat finish.
