The brewery was founded in 1924 near the scenic Chomonkyo Gorge in the mountains of Hagi City, Yamaguchi Prefecture (formerly Kawakami Village), but moved to its current location upstream from Hagi City in 1970 due to the construction of the Abugawa Dam. The name Chomonkyo comes from the name of this scenic spot. This sake was nurtured by the clear waters of Chomonkyo Gorge, which flows through the Ishin Village. The brewery is dedicated to bringing out the full flavor of the rice, and is brewed to cater to people who resonate with a variety of cuisines and scenes.
