Obata Sake Brewery was founded in 1892 (Meiji 25) by Yososaku Obata in the former Mano town on Sado Island, and has been brewing craft-style sake ever since. The motto of sake brewing is "Shiho Wajo" (Four Treasures Harmonized Brewing). This means brewing sake in harmony with four treasures: the three main elements of sake brewing, "rice," "water," and "people," plus "Sado," the place where the sake is produced. The four-eyed family crest of our company also symbolizes this. Sado Island, where Manotsuru sake is nurtured, is rich in the diversity of history, nature, and culture, and is said to be a "microcosm of Japan." Endangered crested ibises soar on the island, and the brewery is engaged in environmentally conscious agriculture. The water is extremely pure soft water that springs up at the foot of the mountain after the snowmelt from the two mountain ranges that run north and south of the island seeps deep into the ground and is naturally filtered. This water quality is ideal for brewing light and soft sake.
