"Gakkogura" is a place where Obata Sake Brewery, a long-established sake brewery founded in 1892, repurposed a former school on Sado Island as its second sake brewery in 2014. Sake is brewed here during the summer months and the facility is operated on four pillars: "sake brewing," "coexistence," "exchange," and "learning." They use raw materials that conserve biodiversity and renewable energy from solar panels for sake brewing. By-products such as sake lees and koji are used in fermented dishes at the Gakkogura Cafe on the premises, combined with ingredients from local producers, thus reducing food waste. Participants from both Japan and abroad gather for long-term stay "sake brewing experience programs" and workshops such as "Gakkogura Special Classes," which allow them to learn about the local cycle, and the community grows every year.
