This sake is named after the words "The Great Universe, the Great Japanese Pleasure" that Ehime poet Sakamura Shinmin held dear in his later years. It is a special junmai sake that exudes gentleness, yet strength, just like Shinmin's personality. Over 20 years ago, we produced this sake as a daiginjo sake, but this time we made it a special junmai sake in an attempt to maximize the flavor of the rice. Furthermore, while we used Yamada Nishiki rice at the time, in line with our brewery's philosophy of local production and consumption, we have decided to use Shizukuhime, a rice variety from Ehime Prefecture that is ideal for sake brewing.
