This sake takes its name from the phrase "Daiuchu Yamato Raku" (Great Harmony of the Great Universe), which was cherished by the poet Sakamura Shinmin of Ehime Prefecture in his later years. Like Mr. Sakamura's personality, it is a special junmai sake that is gentle yet powerful. We produced this as a daiginjo sake at our brewery more than 20 years ago, but this time we have made it a special junmai sake in an attempt to maximize the deliciousness of the rice. In addition, we used "Yamada Nishiki" rice at that time, but in accordance with our brewery's philosophy of using local products for local consumption, we have decided to use "Shizuku Hime," a sake rice suitable for brewing from Ehime Prefecture.
