The Rabbit Ballerina is a sake made using Type-3 (Well Balance) of the four types of sake yeast isolated from the Ehime Prefecture flower "Sakurahime" (delphinium) through industry-academia-government collaboration between the Ehime Prefecture Sake Brewers Association, Tokyo University of Agriculture, and the Ehime Prefecture Industrial Technology Research Institute. The name comes from the fact that it was developed in 2023, the year of the rabbit, that the brewery is located in Unomachi, which means rabbit, and that Utsunomiya Sake Brewery's concept is "making sake that you can enjoy," so the name was chosen based on the idea of fun → dancing → ballerina.
