Founded in 1879, this is Maizuru's only sake brewery, and after a period of contract brewing, it resumed in-house brewing in 2008. Its flagship brand is "Ikegumo," named after the initials of the brewery's name. It is said to be carefully brewed without the use of any enzymes or brewing alcohol to stimulate fermentation, using rice grown in Kyoto Prefecture and underground water from the Yura River that flows alongside the brewery. They offer only junmai sake, each of which allows you to fully enjoy the umami of the rice, including junmai daiginjo made with organic Yamadanishiki rice, junmai ginjo showcasing the unique character of Kyoto's pride and joy, Iwai rice, unfiltered unpasteurized sake making the most of Gohyakumangoku rice, and junmai unpasteurized sake brewed locally in Maizuru's Omachi rice. It is widely loved as a local sake that enhances mealtimes by offering a synergistic effect with the flavors of the food.
