Founded in 1879, this is the only sake brewery in Maizuru that revived its own brewing in 2008 after a period of contract brewing. Their flagship brand is "Ikegumo," named after the initials of the brewery's name. They brew their sake slowly using rice from Kyoto Prefecture and the groundwater of the Yura River that flows beside the brewery, without using any enzymes or brewing alcohol to promote fermentation. They offer only junmai sake, all of which showcase the deliciousness of the rice. These include junmai daiginjo made with organic Yamada Nishiki rice, junmai ginjo highlighting the unique characteristics of Iwai, a sake rice proudly produced in Kyoto Prefecture, unfiltered unpasteurized sake using Gohyakumangoku rice, and junmai genshu brewed with Omachi rice from their local Maizuru area. It is widely loved as a local sake that enhances the flavor of food, making mealtimes even more enjoyable.
