Founded in 1879, this is the only sake brewery in Maizuru that returned to in-house brewing in 2008 after a period of contract brewing. Their signature brand is "Ikegumo," named after the initials of the brewery's name. They don't use any enzymes or brewing alcohol to promote fermentation, and they brew their sake slowly with rice grown in Kyoto Prefecture and underground water from the Yura River that flows next to the brewery. They only offer Junmai sake, all of which allows you to enjoy the flavor of the rice, such as Junmai Daiginjo made with organic Yamadanishiki rice, Junmai Ginjo that highlights the individuality of Kyoto Prefecture's pride and joy, Iwai, unfiltered unpasteurized sake that makes use of Gohyakumangoku rice, and Junmai Genshu brewed with local Maizuru rice, Omachi. They are widely loved as a local sake that can be enjoyed for its synergistic effect with the flavors of the food, making mealtimes even more fulfilling.
