Kintora Sake Brewery's "Koben" began production in 2012 as a local pride project to create a new, renowned sake that Nagoya could be proud of. From the rice and yeast to the label, everything is carefully selected and scrutinized, resulting in a masterpiece born from the culmination of traditional sake brewing techniques rooted in the Echigo style and refined by Nagoya's history and climate, and the passion of young brewers for the next generation. As the name "Koben" (虎変) suggests, meaning transformation and innovation, we will continue to brew "Nagoya's new renowned sake" with the hope and determination that it will evolve year after year, from this year to next, and from next year to the year after.
