Founded in 1725, the brewery will be producing 100% Junmai sake from 2016. They are particular about using local rice, and have revived and cultivated Kame no O, one of Japan's three major varieties, which originated in Shonai Town, Yamagata Prefecture (Shonai region), to brew Junmai Daiginjo sake.
