Founded in 1725 (the 10th year of the Kyoho era), the brewery has been producing 100% Junmai sake since 2016. They are also particular about using local rice, and have revived the cultivation of Kame no O, one of Japan's three major varieties, which originated in Shonai Town, Yamagata Prefecture (Shonai region), to brew Junmai Daiginjo sake.
